Lambs’ Lettuce

The “lamb's lettuce” name appears to stem from the fact that it tastes best during lambing season.

Some people also call it lamb's tongue, because the leaves resemble small tongues.Also known as corn salad or mâche, this small bouquet of mild, dark green leaves is velvety in texture and subtle in flavour. Believed to originate from the Mediterranean and now grown widely throughout Europe, it has a mild sweet-ish taste that provides a good balance for slightly more bitter leaves and makes a good backdrop for strong flavours such as cheese or bacon, therefore working particularly well in winter salads. Tasty and versatile, it also provides several vital minerals and nutrients, including vitamins C, E, and B9, along with beta carotene and essential fatty acids.
