Crab & Avocado Salad with Chilli & Mint Dressing

Extra virgin olive oil
lemon juice
2 ripe avocados, sliced
For the crab; 200g fresh or tinned crab meat
2 spring onions, finely chopped
5g chives, chopped
5g parsley, chopped, salt & pepper
For the dressing
2 large mild red chillies deseeded and finely chopped
2 shallots, peeled & finely chopped
5g mint, chopped
2 limes
juiced, 2 tomatoes
diced, sea salt
50ml extra virgin olive oil.
"Mix together the ingredients for the dressing and set aside. Combine the salad leaves with a little olive oil
and lemon juice then season. Distribute the salad between 4 plates. Arrange the avocado slices on each salad.
Mix together the crab, onions, herbs and season well. Distribute the crab mix over the salads. Drizzle with the
dressing and serve with a glass of chilled glass of Chablis.
