Halloumi & Red Pepper Parcels

4 red peppers
50g halloumi cheese slices x 4
8 olives sliced
1 tbsp fresh oregano
1 small red chilli pepper, finely chopped
1 lemon, zest & juice
"Grill the red peppers until they just begin to soften.
To make strips, slice the peppers down one side & trim off each top & base.
Place one slice of halloumi in the middle of each strip & evenly distribute the remaining ingredients over each.
Fold the pepper over the halloumi & keep in position using a cocktail stick.
The parcels can then be heated under the grill or on a griddle. Heat until the halloumi begins to
soften & the pepper is slightly charred. Serve immediately with Florette sweet & crunchy salad.
