Crispy Fried Prosciutto and Blueberries with Spinach, Watercress and Rocket

15ml extra virgin olive oil
3 slices of prosciutto or Parma ham
2 tbsp pine nuts, 2 red or which chicory bulbs separated,
5g blueberries
Parmesan cheese for garnish
"Heat the oil in a pan. When hot, add the prosciutto and cook over a medium heat until crisp and golden brown.
Drain on kitchen paper and when cool, crumble into bite size pieces. Add the pine nuts, chicory and prosciutto into a bowl and toss.
Sprinkle over the blueberries and parmesan.
Serve with a glass of shiraz.
