Chicken & Olive salad

2 chicken breasts
70g marinated black or green olives
175g cherry tomatoes halved
1/4 cucumber diced
1 tbsp capers

Heat a griddle pan until hot or preheat a grill. Brush the chicken breasts with some of the marinade from the olives and grill for 8-10 minutes on each side until cooked through. Allow to cool. Mix the lettuce, olives, cucumber and capers together in a large bowl. Rip the chicken into pieces and mix into the salad. Toss well before serving and serve immediately with a glass of chilled Sauvignon Blanc.
